I love the new year. I love the clean slate, the freshness in the air, and the possibilities that lie ahead in the new year.
We've enjoyed a quiet and restful Christmas holiday at home. We hosted my husband's family from Ohio, Chicago and San Francisco for Christmas and had a lovely time reconnecting and watching the kids laugh and play. We ate rice and beans with tamales on Christmas Eve after our candlelight church service, and for Christmas supper, I splurged on a beef tenderloin and make a delicious red wine-rosemary glaze for the meat. We've been enjoying a steady stream of leftovers and working our way through the pantry and freezer, using up all the holiday food we purchased!
One of my goals this year is more intentional meal planning...and drinking more "green smoothies"...so if your goal is better meal planning as well, I sure hope these weekly meal plans help you achieve that goal.

How To Clean Stained Cutting Boards
8 tostada shells
1 can refried beans (or 2 cups homemade refried beans)
1 chicken breast, shredded, or about 2 cups
1/2 tsp ground cumin
2 Tbsp lime or lemon juice
Canned, or cooked black beans, about 1 cup
About 1/2 cup salsa
8 pinchfuls of shredded cheese

The $5 Dinner Mom
I have a little problem. I can not make a meal for my family that costs more than $5. My mind is filled with prices on my favorite ingredients, and frugal recipes that can be made for less than 5 bucks. It’s unnatural, really. But, my pocketbook thanks me!
