This week is completely normal. Just our regular activities and commitments, no extra dentist appointments, haircuts, etc. I'm rather looking forward to this "breath of fresh air" from the other busier weeks we've had the past few months. I'm looking forward to being home every afternoon to fix dinner, and to not feel like I'm racing to get food on the table. I hope you can enjoy one of these weeks soon too :)
Now on to this week's yummy recipes...
Y'all I have to show you these adorable *and ridiculously delicious* cupcakes that we had at a birthday party over the weekend.
Several months ago, one of my nearest and dearest friends from high school moved back to San Antonio....and down the street from where we live and I love, love, love that they are so close and we get to spend so much time together. She has a little boy who just turned 2.
The older boys and I had a blast (with our mittens on!) at his party at Kiddie Park this weekend. We didn't let the cold snap stop us and had a great time riding the rides with him and celebrating his birthday.
My friend picked up some cupcakes from "Bird Bakery" and they place their mini-cupcakes in an egg carton. (Isn't that adorable?!)
I just love that they are so close by now and that the boys can play together!
Another thing I'm super excited about this week...it's a "normal" week...
2 cups cooked & shredded chicken
1 Tbsp olive or vegetable oil
2 or 3 peppers
1 large onion
1 Tbsp homemade taco seasoning, or store bought fajita seasoning
1 cup shredded cheese
Salsa, sour cream, guacamole, optional
Fresh fruit, baby carrots or other simple side dish

I have a little problem. I can not make a meal for my family that costs more than $5. My mind is filled with prices on my favorite ingredients, and frugal recipes that can be made for less than 5 bucks. It’s unnatural, really. But, my pocketbook thanks me!
