I managed to get snacks into the boys to tide them over and then rested for a few minutes. Or an hour.
Then on to dinner prep before our Valentine's family movie date!
So grateful for plans on those days when life throughs your swollen knee curveballs!

Y'all. There are so many reasons to make a meal plan and I'm about to share #462.
On Friday morning, Charlie woke up around 2 am complaining of knee pain, so I snuggled with him for a minute and shuffled him back to bed, thinking it was muscle cramps.
He woke up crying from pain at 6 am. I checked his knee and it was visibly swollen. He doesn't know how or why, so we rushed over to the orthopedic children's doc, had Xrays done and saw the doc. He said that he had quite a bit of fluid on his knee and was concerned about infection. We had to go do a blood draw and hope that we didn't need to do an aspiration and possible surgery. Just the thought was enough to send me into a state of adrenaline ridden exhaustion...thankfully it was all normal and we're just waiting for the swelling to subside. When we arrived back home around 2 pm, I was wiped out...and the last thing I wanted to worry about was dinner.
1-1/4 pounds boneless skinless chicken thighs
1-1/2 cups sliced celery
1 can (15 oz) Rosarita Premium Whole Black Beans
1 can (14.5 oz) Hunt’s Fire Roasted Diced Tomatoes with Garlic
1 can (8 oz) Hunt’s Tomato Sauce
2 tablespoons red hot pepper sauce
1/3 cup crumbled blue cheese
2 cups chicken or vegetable broth
12 oz. can tomato paste
2 tsp ground cumin
1 tsp garlic powder
1 tsp onion powder or 1 Tbsp minced onion
3 cups cooked and shredded chicken
12 corn tortillas
about 1 – 1 1/2 cups shredded jalapeno jack or pepper jack or Mexican blend cheese
Fresh veggie for side dish

The $5 Dinner Mom
I have a little problem. I can not make a meal for my family that costs more than $5. My mind is filled with prices on my favorite ingredients, and frugal recipes that can be made for less than 5 bucks. It’s unnatural, really. But, my pocketbook thanks me!
